Head Chef Giancarlo Zapata was born and raised in Lima, Peru. He has a deep love for the depth and variety of Peruvian cuisine with the goal to bring rich Peruvian flavors into the mainstream. His career began at the Lima Hotel Marriott, where he grew through the roles of cook to chef to kitchen supervisor. Following a two-year course of study at the prestigious Le Cordon Bleu, Chef Zapata worked with a variety of cuisines in Japanese, Mediterranean, Italian, and French restaurants.
