Chef Greg Desmangles is the Culinary Director overseeing The Roost, Urban Roots Brewery & Smokehouse, Bawk Chicken + Bar and Pangaea Bier Cafe in Sacramento.

Desmangles, a Sacramento native, grew up in two large families where food and family took center stage. Rather than watching the game during the holidays, he spent his time in the kitchen with his mother, aunts and grandmothers.

He began his career in 2011 working for his uncle Rob Archie as a busser and dishwasher at Pangaea Bier Cafe. During his time there, he worked his way up to Sous Chef and helped the pub win the Sacramento Burger Battle in back-to-back years.

In May 2018, he was promoted to be the opening chef for Urban Roots Brewing & Smokehouse in downtown Sacramento, which quickly became known for its high quality beers and exceptional smoked meats.
